Finca Vallejo is produced with Verdejo grapes, a selection from vineyards located in the towns of Rueda, La Seca and Alaejos.
Night harvest to ensure the grapes reach the winery in the best quality conditions.
The grapes are pressed in a gentle and very controlled manner to avoid undesired extractions. The must obtained is taken to stainless steel tanks where alcoholic fermentation takes place at controlled temperatures.
We seek at all times to promote and preserve the primary aromas typical of the variety.
